You won't even know these babies have no added sugar! They taste delicious, with the minty punch from the choc mint slice biscuits and the delicious choc mint biscuit base. They are also really simple to make.

Ingredients

Base:

  • 100g no sugar added biscuits
  • 50g butter, melted
  • 2 tbsp. cocoa powder
  • 2 tbsp. sweetener
  • 1 tsp peppermint essence

Middle:

  • 110g plain yoghurt
  • 1 tbsp. coconut oil
  • 2 tbsp. shredded coconut
  • 1 tsp peppermint essence

Top:

  • 120g no sugar added chocolate

Instructions

  1. Preheat oven to 180 degrees.
  2. Blend the biscuits into a fine crumb. Stir in the cocoa powder and sweetener. Melt the butter and add the peppermint essence after melting. Pour the butter mix into the biscuit mixture and mix well.
  3. Using a silicone muffin tray, put a spoonful of mixture into each, repeating until all of the biscuit mix has been used. Press down firmly.
  4. Oven bake for 12 minutes. Allow to cool completely before starting the next stage.
  5. For the middle section, melt the coconut oil. In a bowl, add the yoghurt, coconut, sweetener and essence. Pour in the coconut oil and stir well. Spoon onto the biscuit bases, again pressing down and smoothing. Refrigerate until set.
  6. For the top, simply melt the chocolate. Spoon onto each biscuit and smooth over. Refrigerate until set.
  7. Once set, carefully pop the biscuits out of the moulds.
